Lids cost $0.50-$1 each. Skip the $0.20 "canning" lids from the hardware store. They leak. You’ll lose your food and your sanity.

Water bath: For high-acid foods only. Tomatoes, pickles, jams. If you can’t get the pH right? You’re playing Russian roulette.
