Water bath is for high-acid foods ONLY. That means:
Water bath won't kill botulism spores. It only works for acidic foods (pH < 4.6). If you try it on beans, corn, or meat? You're gambling with your life. Don't be that person.
For anything low-acid (pH > 4.6), you need a pressure canner. That's:
CRITICAL: Pressure canners must reach 116°C (240°F) at 15 PSI. Water bath only hits 100°C. Botulism spores survive at 100°C. Pressure canner is the only safe way. No exceptions.
Start simple: Buy a water bath canner first ($50-$100) for jams and fruits. But if you're canning veggies or meat, skip the water bath. Get a pressure canner.
Don't trust old recipes: Grandma's method? Probably unsafe. Use only tested recipes from reliable sources (e.g., USDA, but adapted for Australia). The Canning Company (theCanningCompany.com.au) has Aussie-approved guides.
Check your gauge: Pressure canners need a gauge. If it's not working, don't use it. Test it annually. Bunnings sells gauge testers ($15) – get one.
