Off-grid living demands self-sufficiency, and growing your own grains is the only way to ensure food security. This guide covers cultivating wheat, oats, corn, and rice, along with storage and milling solutions. My own rice crop failed last summer when the heat baked the soil in our local Australian climate, leaving me with nothing but dust. The failure was absolute; the high ambient temperatures during the grain-filling stage caused rapid desiccation of the panicle, halting starch deposition and resulting in sterile, shrivelled grains that offered zero yield. Hard red or white wheat does the job in temperate climates, so that's what goes into the well-drained soil that gets full sun. I don't move until the kernels are dry and golden, then it's harvest time.

Oats

Oats go into the cooler country because they're resilient—the most forgiving cereal I grow. I keep moisture steady through the season and make sure the ground drains freely. Harvest when the heads turn brown.

Corn

Choose drought-resistant varieties. Plant in blocks for better pollination. Harvest when the kernels are plump and milky.

Rice

I've grown rice in the subtropics where warm nights and humidity come standard. Flooded paddies are essential—standing water keeps the roots cool and the plants happy. I cut when the grains dry out and the stalks go golden; that's your sign it's ready.

You can grow wheat, oats, corn and rice off-grid, though my rice crop last season is proof of what happens when you cut corners. I ran it without a paddy or flood control. Roots rotted.
