Marinade isn't just for taste. It kills bacteria. Do it right or don't bother.

Don't use that "special" marinade from the back of your pantry. It's a gamble you can't afford.

Dehydrating: Heat is Non-Negotiable

Dehydrating isn't just drying. It's killing pathogens. Skip this step and you're asking for food poisoning.

Excalibur 9-tray dehydrator: $350-$400 new (Amazon Australia). Used on eBay: $250-$300. Cheap dehydrators? They're a waste of money. Don't buy them.

Pathogen Destruction: How It Actually Works

Pathogens (E. coli, salmonella) die at 60°C+ over time. Not because it's "cooked" like a steak, but because the heat and dryness kill them. If you don't hit 60°C for 4+ hours, they're still alive.

WARNING: If your jerky isn't dry enough or you didn't hit 60°C, you're eating raw bacteria. Don't be that bloke who gets sick because he was too lazy to wait.
