Get the Cream Right First
Bad cream = bad butter. No exceptions.
Use fresh, full-cream milk from cows not on a factory feedlot. Grass-fed = better butter.
Let milk sit overnight in a cool place (not fridge). Skim the cream off the top. Aim for 35%+ fat.
Don't use UHT milk. It won't churn. Ever.
Pro Tip: If your cream's thin, boil 1L of milk to 100ml. Skim the cream. Works every time.
Churning Butter by Hand
Forget the $200 electric churns. These work with what you've got.
Mason Jar Method: Shaking Cream for Small Batches
Fill a 1L jar 3/4 full with cream.
Seal tight. Shake hard for 15-20 mins. Like you're trying to kill a wasp.
When you hear the "glug-glug" turn to "thump", stop. You've got butter.
Warning: Don't shake too hard. You'll get butter oil (rancid mess). Stop when it's thick like yoghurt.
The Hand-Cranked Wooden Churn
Get a 5L wooden bucket (Bunnings has them for $15-$20).
Put cream in. Add a wooden paddle (or a stick with a notch).
Stir in a figure-8 motion for 20-30 mins. No rest. Just keep going.

Get the "wooden bucket" not the plastic one.
Storing Butter Without a Fridge
Butter goes rancid fast. Here's how to keep it good for weeks.
After churning, rinse butter in ice-cold water until water runs clear. Removes buttermilk.
Press into a ball. Wrap tightly in food-grade beeswax wrap (not plastic).
Store in a cool, dark place (like a pantry). Not the fridge. Fridge makes it hard.
Emergency Tip: If you've got no beeswax, wrap in clean cotton cloth and bury in a cool spot. Works for 2 weeks.

Raw Cream: $2.50-$3.50/L from local dairy farmers (check Facebook groups like "Off-Grid Victoria" or "Perth Homesteaders").
